We switched it up this week with a midweek post.
With fall in the air, I couldn’t help but concoct an autumn inspired soup. It just seems right when temperatures start falling and sweaters come out. After all, who doesn’t want to come home to a warm soup?!
I purchased most ingredients from Trader Joe’s and the veggies local. Budget friendly is always a perk.
Here’s what you’ll need:
- 1 box of Trader Joe’s Hearty Vegetable broth
- 1 cup of fresh broccoli
- 1 cup of fresh green beans
- 1 cup of kale
- 1 can of Great Northern Beans
- Trader Joe’s Multigrain Blend with Vegetables
- 3 tbs of Habenero La Onda
Add your veggie broth to a medium sized sauce pan. Bring to medium heat.
Chop your broccoli, kale and green beans into bite sized pieces. Add to the broth and let simmer for 5 minutes.
Please feel free to take this recipe as a base and add whatever other veggies that you would like! Potatoes, squash, etc. The best veggies are in season during the fall. Visit your local farmers market to find what’s in season near you. Some of the best soups that I have made, have been ‘everything-but-the-kitchen-sink-‘ types. Get creative, people!
When using already cooked ingredients, (beans, grain blend,etc.) these can be added last as they don’t need to cook in the broth. However, it’s always a good idea to let them soak up the flavors.
After 5 minutes, add your cooked ingredients and let simmer to blend all flavors. Begin to stir in your La Onda sauce.
This time around, I chose our Habenero flavor for an added kick.
As I have said many times… I’m always amazed at how La Onda can act as a vegan cheese. Adding your almond dip creates a creaminess to the soup. Super tasty without taking fresh veggies and adding heavy cream. Don’t get me wrong, it’s delicious but seems like it defeats the purpose.
Finish your soup with finely chopped basil. Yum 🙂
